It is similar to the thermo oil method, but the inside of the pipe is filled with water, so that the inside of the pipe is heated to steam to make natural circualtion and increase the temperature.
The heat storage property is very high, and it does not quite cool down as the temperature rises, so the same bread steadily whenever you bake it.
